Cucumber & Red Onion Salad

Sometimes you just need a salad that is not lettuce based. This marinated salad has a nice tang and is not overpowered by the red onion. I like to use a mandoline to slice the vegetables very thin. If you do not have one, just slice them as thinly as possible.


Cucumber & Red Onion Salad
adapted from Taste of Home 2013

1/2 English cucumber, sliced very thin
1/2 cup thinly sliced red onion, cut into halves or quarters depending on size
1 Tbsp white vinegar
1 Tbsp apple cider vinegar
1 Tbsp rice vinegar
1/4 tsp kosher salt
1/4 tsp freshly ground black pepper
1/2 tsp sesame oil

Whisk together the dressing ingredients and pour over the cucumbers and onions. Cover and refrigerate for al least one hour before serving. 

Serve alongside grilled chicken or beef.
