Baked Garlic Shrimp

First day on the journey to the new me .... no caffeine, no carbs, no wine! .. for 11 days. I modified a recipe to fit the requirements by eliminating the breadcrumbs and replacing olive oil with vegetable stock. Served with a side of steamed zucchini.


Baked Garlic Shrimp
Vegetable cooking spray
1 1/4 pounds medium shrimp, peeled and deveined
3 tablespoons finely chopped fresh parsley
1 teaspoon grated lemon rind
3 garlic cloves, minced
2 tablespoons fresh lemon juice

4 teaspoons vegetable stock

Coat 4 individual gratin dishes with cooking spray. Combine the parsley, lemon rind, salt, and garlic in a bowl; stir in lemon juice and stock. Add shrimp and toss to coat. Divide shrimp evenly among dishes. Divide residual liquid from the bowl among the gratin dishes. Place dishes on a baking sheet. Bake at 400° for 10 minutes or until shrimp are done.
