Most salad dressing I have ever tried to make never seem to taste as good as the store bought. They separate or just lack flavor. Although this dressing is not weight watchers approved it is very tasty so a little bit goes a long way. Does anyone have a tried and true salad dressing recipe that they would be willing to share?
2 cups 1/4 inch diced white bread
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground pepper to taste
3/4 tsp anchovy paste

1 small garlic clove, smashed
1/4 cup mayonnaise
1/4 tsp dried lemon zest
1/4 cup mayonnaise
1/4 tsp dried lemon zest
2 Tbsp lemon juice
1/4 cup freshly grated Parmesan cheese, plus more for garnish

Preheat the oven to 350°. In a medium bowl, toss the bread with 2 tablespoons of the olive oil and season with salt and pepper. Spread the bread on a baking sheet and toast for about 10 minutes, stirring once, until golden and crisp.
In the same bowl, using a spoon, mash the anchovy paste with the garlic and a pinch of salt. Whisk in the mayonnaise, lemon zest and lemon juice, then whisk in the remaining 2 tablespoons of olive oil and season with salt and pepper. Stir in the 1/4 cup of grated cheese.
Chop the romaine depending on the number of guests. Toss with a small amount of the dressing. Top with the croutons, shrimp and additional Parmesan cheese. Serve passing the remaining dressing.
