Sausage and balsamic two of my husband's favorite culinary words.
Roasted Italian Sausages with Balsamic Tomatoes
Olive oil
6 links hot or sweet Italian sausage
1 pint grape tomatoes
1 small onion, coarsely chopped
3 cloves garlic, crushed
Salt and pepper
2 1/2 Tbsp balsamic vinegar
Preheat the oven to 425°. Line a rimmed baking sheet with foil for easy clean up. Drizzle enough olive oil onto the baking sheet to coat the bottom. Add the sausages, tomatoes, onion and garlic, season with salt and pepper and pour the vinegar on top of the vegetables. Roast approximately 30 minutes, turning the sausages and vegetables once halfway through.
