What Do You When When You Are Upset? ...... I Chop!

If Warren was home I would have been making Ratatouille but I had to downsize. This recipe was pretty therapeutic.

Pasta with Fresh Tomato Sauce
2 cups coarsely chopped tomato, retaining the juice
1/4 cup extra virgin olive oil
1 cup firmly packed fresh basil leaves, minced
1 cup firmly packed fresh parsley leaves, minced
3 tablespoons freshly grated Parmesan
3 garlic cloves, minced
2 teaspoons salt
1 teaspoon freshly ground black pepper
1 pound pkg of your favorite pasta, cooked according to package directions.

Combine all the ingredients except the pasta and let stand at room temperature, covered, for at least 1 hour.
Serve pasta topped with sauce. Garnish with fresh parsley. if desired.
