Tomato Stuffed with Lemon Pepper Tuna Salad

Adapted from
1 can water packed tuna, drained
2 Tbsp reduced fat mayonnaise
1 Tbsp fresh lemon juice
1 tsp lemon zest
2 Tbsp chopped fresh parsley
1/2 tsp fresh ground pepper
1 scallion, chopped
1 medium tomato top sliced off and center removed
Combine all ingredients except tomato in a small bowl until well combined. Fill the tomato with half of the tuna salad. Place on a med of lettuce, spinach or arugula if desired.
