Wednesday Night Dinner - Buffalo Chicken Salad

Needed something quick and easy for dinner since I got home later after finishing birthday shopping for Nick. I sent Warren to the grill with some boneless skinless chicken thighs sprinkled with Montreal Steak Seasoning. I thew together some "big" salads from the farm share and prepared a buffalo sauce for the chicken from 6 Tbsp hot sauce and 2 Tbsp melted butter.
For the blue cheese dressing I increase the quantities from the dressing for the chicken and grape salad on this blog to:
2 Tbsp reduced fat mayonnaise
1 Tbsp white wine vinegar
4 tsp blue cheese crumbles
