2 cloves of garlic chopped
1/2 medium onion, chopped
3/4 stalks of celery, chopped
2 carrots, peeled and thinly sliced
1 parsnip, peeled and thinly sliced
1/3 red bell pepper, chopped
1/4 poblano pepper, chopped
32 oz chicken broth or stock
1 tsp dried parsley
1 tsp dried chives
1/2 tsp dried oregano
1 cup Spring Mix
1/8 c basil, chopped
Salt and freshly ground pepper to taste
Combine garlic thru oregano is a soup pot. Bring to boil. Reduce to simmer, partially cover with lid and cook approximately 10 minutes or until vegetables are barely tender. Turn off heat. Add Spring Mix and basil, stirring until wilted. Season to taste with salt and freshly ground pepper.
