Using the bountiful supply of tomatoes that came in the farm share this week. Use this sauce to top your favorite pasta along with chopped fresh basil and grated Parmesan cheese.
3 tablespoons olive oil
2 large garlic cloves, minced
1 medium onion, finely chopped

3 large tomatoes, finely chopped
1 jalapeno, very thinly sliced
1 teaspoon thyme leaves
1 teaspoon minced oregano
Salt and freshly ground pepper
In a saucepan heat the olive oil until hot but not smoking. Add the garlic and cook until fragrant but not browned. Add the onion and cook, until softened but not browned. Add the tomatoes, jalapeno, thyme and oregano, season with salt and pepper and bring to a simmer. Cook the tomato sauce over moderate heat until thickened, about 5 - 15 minutes depending on how thick you like your sauce.
