Sausage Breakfast Bake
This is my variation of the Bob Evans' Sunrise Squares. It is a cross between a strata and a frittata. A strata has bread included but needs to rest in the refrigerator for several hours or overnight. A frittata does not include the bread but can be baked in the oven.
4 slices reduce carb bread, cut into 1/2 inch cubes
1/2 cup diced onion
1/4 cup diced bell pepper
1 cup shredded reduced fat Cheddar cheese
6 eggs
1 1/2 cups skim milk
1/2 teaspoon salt
1/2 teaspoon dry mustard
- Preheat oven to 350 degrees F.
- Cook sausage in a skillet over until browned. Remove from pan and cut into 1/2 inch pieces.
- Add a little olive oil to the pan and sauté the onions and peppers until soft but not browned.
- Spread bread cubes in greased 9 x 13 inch baking dish; top with sausage, peppers and cheese. Whisk eggs, milk, salt and mustard until well blended; pour over cheese.
- Bake 30 to 35 minutes or until set. Let stand 5 minutes before cutting. Serve hot. Refrigerate leftovers.
