I am trying to clean our the freezer before we move in the spring. What to do with brats? ... Braise them in beer, slice and put onto to some buttery cabbage for a pseudo German meal.
Beer Braised Brats
4 brats
Beer, to cover
1/2 medium onion
2 Tbsp butter butter
Place brats in a saucepan with the onions and butter, cover with beer. Bring to a boil and reduce to simmer until brats are cooked. Remove brats and set aside beer mixture. Grill brats in hot grill pan until golden brown and return to beer mixture until ready to serve. Slice and serve on top of cabbage.

Buttered Cabbage
1 small cabbage, halved cored and cut 1-inch pieces,

1 tsp caraway seeds
salt and pepper
Place cabbage and caraway seeds in a large skillet with 1 cup of water. Bring to a boil and reduce heat. Cover skillet, simmer until cabbage is very tender. Tossing occasionally, 12-15 minutes.
Drain any water remaining in skillet. Add butter; season with salt and pepper. Toss gently to combine.
