Mojito Chicken Marinade
4 tablespoons chopped fresh mint, divided
3 tablespoons lime juice
2 tablespoons extra-virgin olive oil
2 tablespoons pineapple rum
2 teaspoons grated lime peel
Combine all ingredients and pour over 2 boneless, skinless chicken breasts
Caesar Chicken Marinade
1/4 cup plus 2 tablespoons extra-virgin olive oil
2 tablespoons red wine vinegar
1 tablespoon Dijon mustard
1 teaspoon anchovy paste
2 large cloves garlic, smashed
Salt and pepper
Salt and pepper
Combine all ingredients and pour over 2 boneless, skinless chicken breasts
When all was said and done, Warren preferred the Mojito Chicken and I preferred the Caesar. Should make sharinf leftovers pretty easy.
